400g sweet shortcrust pastry (or a pre-made pastry case)
6 lemons
6 eggs, 300g caster sugar and 60g diced butter
Steps:
Butter a loose-bottom tarte dish. Roll out the pastry and line the dish with it. Bake blind for 15 mins at 190C. Leave to cool. Reduce oven temperature to 150C. (If not using a pre-made pastry case)
Juice & zest the lemons. In a pan, pour the lemon juice and zest, sugar and the whole eggs. Mix with a spatula and cook at medium heat until the mixture bubbles (be careful not to let the eggs scramble), stirring continuously. Add the diced butter.
Pour the mixture into the pastry case and leave to rest for 10 minutes. Place in oven for 15 mins. Remove, cool and serve!

Nearly 6 years ago we downsized and disposed of all our old china. We purchased Buttercup china - 12 of everything, and that is all we have used everyday since that time; for dinner parties, family get-togethers and just the 2 of us. In all those months, there has not been a chip or a crack in anything. Today, I carelessly dropped a bowl on the kitchen tiles and not surprisingly it smashed. That is the only damage we have had. As I am so amazed and pleased with the quality of Buttercup china I have immediately ordered a replacement. In fact I ordered 3 new bowls, as we use bowls a lot!
