Spaghetti Bolognese (meat free) with sundried tomatoes

Ingredients

  • Fresh spaghetti
  • 1 onion, 3 celery stalks, 3 large tomatoes
  • 40g sundried tomatoes
  • Olive Oil
  • 200 grams lean meat alternative
  • 2 tsp mixed dried herbs, salt & pepper
  • Parmesan

Instructions

  1. Cook the spaghetti al dente. Drain and keep it warm.
  2. Heat a non-stick frying pan and the olive oil. Add the mince and fry for 5 minutes. Then add the onion and celery cubes and sauté for 3 minutes. Add all the tomatoes and dried herbs and season with black pepper.
  3. Remove the sauce from the heat. Stir in the parmesan blend. Cover with a lid and leave to stand for 1 minute.
  4. Divide the spaghetti between 2 plates, spoon over the sauce and sprinkle with the remaining celery leaves.
